GranPanzerotti tomato, mozzarella and basil with spicy cream of carrots and tomatoes

  • 1 package of GranzPanzerotti filled with tomato, mozzarella and basil
  • 8-10 small tomatoes
  • 1 onion
  • extra virgin olive oil
  • 3-4 carrots
  • 1 fresh chili pepper
Clean carrots and cut them . Cook them in salty water for 10 minutes, until it will be soft. As an alternative, you can use a pressure cooker for 5 minutes. When they are soft, fry them with a spoonful of oil and a bit of minced chili pepper. Then mix it with few water, until obtaining a uniform and smooth cream. Salt and season with pepper . Warm a spoonful of extra virgin olive oil in a pan, and fry a cut onion. Then add small tomatoes which are cut in slices. Unite the GranPanzerotti, adding 1 glass of water. Salt it and cook it for about 5 minutes, mixing the ingredients. Pour a spoonful of carrot cream in every plate and put on it the GranPanzerotti and tomatoes. According to your taste, complete the dish with extra chili pepper .
