(Italiano) Girasoli alle verdure grigliate con “pesto” di rucola e zucchine

  • 1 package of vegetables Girasoli
  • 1 small zucchini
  • 1 a handful of rucola
  • 10 basil leaves
  • 1 spoon of pine nuts
  • evo oil as required
  • 1/2 slice of garlic (optional)
  • salt as required
Clean the zucchini a chop it in cubes, eleminate the white central part. In a non stick pan warm a teaspoon of evo oil, and lay down a slice of garlic and the zucchini in pieces. Cover with half a glass of water and let cook for 5 minutes until the zucchini are soft. Salt to taste. Warm up, Then place the whole thing in a blender with the arugula, the basil and the pine nuts, eliminate the slice of garlic, if you don't appreciate it. Add the oil and whip until you obtain a cream like the pesto. In an ample non stick pan warm a thread of evo oil, add the ravioli and 200 ml of water. Salt to taste and let cook for 5 minutes or until the water is evaporated. Flavour with "arugula and zucchini pesto" and cook for 1 or 2 minutes. Serve immediatly.
