(Italiano) Girasoli ai legumi con verdure profumate al curry

  • 1 package of legumes Girasoli
  • 1/2 eggplant
  • 1/2 yellow pepper
  • 1 carrot
  • 1/2 zucchini
  • 1/2 slice of garlic
  • 1 teaspoon of curry
  • basil
  • 2 spoons of evo oil
Clean the vegetables, peel the carrots and chop them in small pieces. With a grinder, grind approximately the vegetables, except the garlic. In an ample pan warm the evo oil and add the garlic. Mix the vegetables and half of a glass of water. Cook for 4-5 minutes mixing often. Remove the garlic. Add the curry, 200ml of water, and salt. Pour the Girasoli and mix. Cook for 5 minutes, or until the water evaporates.
