Cups with aubergine mousse, perline Parmigiano, chopped ham steak and grana wafer

  • 1 package of Parmigiano Reggiano perline
  • 1-2 small aubergines
  • half of a garlic slice
  • 80 g. of fresh cream
  • 80 g. of chopped ham steak
  • olive oil
  • grana padano cheese
  • basil
  • salt
Wash the aubergines, cut them in cubes and brown them in pan with three spoonfuls of olive oil. salt them. When they are soft, put them in a bin and whip them with an immersion mixer. When the mixture has the solidity of a cream, unite the cheese using a palette knife. toast the chopped ham steak in pan, without adding fats. Cook the perline in abundant salty water. Drip them and season them with olive oil. Prepare the cheese wafers and put them in a microwave oven for about 60 seconds. Arrange the aubergine mousse on the bottom of the cups, place the praline , put the chopped ham steak. Complete the dish with the cheese wafers and basil.
